Fowl and their eggs, such as the milk for our ice creams and wedding cakes, are sourced from local farms. For fruits and vegetables we let ourselves be guided by the seasons, and freshwater fish & shellfish are caught regionally. Our registered vinologist not only proposes suitable wines for the culinary interpretation of your day, but the Castello also has its own wines made from our own vineyard.
